Merriman's executive chef Philip Wang takes us through their Wok-Charred Ahi, step by step. Ingredients: sashimi-grade ahi, salt, pepper, marinade (with Hawaiian chili peppers, butter, ginger, garlic, marjoram), Japanese white sweet potatos, tangerine juice, peppercorns, water, butter, ginger, romaine leaves, edamame 1) Salt and pepper the tuna, brush it lightly with marinade 2) Put it in the wok, sear the fish, caramelizing the outside 3) Whip your sweet potatoes in a separate pan, add butter 4) Reduce tangerine juice and add peppercorns to it. 5) In yet another pan, add water, butter, diced ginger and romaine heart leaves. Cook until the romaine is barely wilted. 6) Build the dish; sweet potatoes go on the bottom, finish with romaine and edamame, or soy beans. Add with green peppercorn gastrique, top with caramelized ahi tuna.
