For more great videos featuring Poh, visit www.sunricetotherescue.com.au Follow SunRice: www.facebook.com/sunricefoods instagram: @sunrice www.sunrice.com.au Serves 4 – 6 Prep time 15 mins, Cook time 20 mins 1 cup brown rice 880g butternut pumpkin, skin left on, diced 3cm cubes 1/2 cup (70g) toasted pine nuts or slivered almonds 3 cups baby spinach leaves 1/2 red onion, peeled, diced 5mm 2 Tbs lemon juice or white balsamic OR to taste 1 Tbs olive oil salt & pepper to taste Method Preheat oven to 180ºC. Cook rice using the packet instructions. Cool. Lay pumpkin on a baking tray lined with baking paper. Drizzle with olive oil and sprinkle salt and pepper over the top. Roast for about 40 minutes or until tender. Cool. Combine all the ingredients in a salad bowl and toss with clean hands. Serve immediately.
