Sumatra is a large island of 78 million people making 70% of Indonesia's total income from its rich farming areas. The coffee from the region is known as some of the best in the world. A team consisting of George Geckos from Coles, Steven McGuiness from Beans Coffee Roastery, Shayne McCristal from Peak Coffee, Jay Beaumont from Focus Magazine and our team leader, Justin Metcalf from Daily Roast. This is part one of a two part series.

well im a bit confused. so ur saying the fermentation u say is after it was soak in water it will be put to a sack and then let it rest there for 1 and half day before hauling?? is that correct?
