In the fall in Japan, stockpiles of apples decorate the fruit section of the grocery store, so this is a great seasonal pork roast that looks impressive, and tastes great, and uses fresh produce that are fit for the season. Check out their other recipes if this one doesn't interest you! The salad is also SO easy, it took only a few minutes to throw it all together, and it tastes great. I find that quinoa fills you up quicker so you don't need as much, plus it's easier to digest than regular white rice. :) Let me know if you decide to try it, this one is always quite impressive to my Japanese friends, because they don't normally consider the combination of apple and pork presented as a savory dish.
