Pepper in India
In 1997 Herbie & Liz went to the South of India to visit spice plantations and source the best black pepper in the world. This was the last time they saw pepper being traded using the old open outcry system as pepper trading, like so many other commodities, has been computerised. Some of the footage is a bit basic as it was filmed on an old camcorder.

Drying the peppercorns in sunlight is better than boiling them. More natural and less chance of the pepper getting spoilt from mold

Untreated mouldy pepper will have a grey bloom on the peppercorns. Reconditioned mouldy pepper will be unusually shiny (evidence of the oil used) and generally has a musty aroma rather than a clean, piercing "piperine" fragrance. I never knew about mouldy pepper. Whats a way of knowing if you have purchased mouldy pepper. In the Uk, I just buy pepper from companies like shwartz in the supermarket in little jars.
