Every Christmas Abel & Cole get their organic, free range bronze turkeys from Copas (and our free range from Paul Kelly). They are raised to the highest welfare standards, are hung for two weeks (which develops the flavour even more) and are hand plucked. Fast forward a few decades, four children (and now grandchildren), and Tom's still going strong. It's a proper family affair and everyone is involved. The birds benefit from a fuller life and reach full maturity of 6 months. They have acres of organic grazing pastures, including patches of sunflowers which they use as natural cover. They snooze in open barns at night on bales of hay and the farm manager Steve and his turkey dogs (three collies) keep close watch over the birds to make sure they stay healthy and well.
