I am a permaculturalist, please stop saying you are off the grid. I know you mean you generate all your own power but anything requiring technology you did not create yourself from materials you have on your property cannot be off the grid. The "grid" is vital for every piece of technology, even used technology, that you don't produce yourself from your own materials. It is a minor delusion but a delusion nonetheless.
Profit is another thing that cannot be achieved off-grid. The money you earn comes from a system dependent on the "grid". If your customers were not participating in the wider energy network - the grid - then they would not have money to pay you. Off the grid profit comes closest when you participate in a local currency system.
I love your system, it looks fantastic. But it's not off the grid. Being off the grid doesn't actually mesh with permaculture principles, where everything is integrated as much as possible. No single property can be sustainable by itself without dramatic cutbacks in quality of life. Only a very wide community can come close to true sustainability - and even then it is doubtful. Permaculture isn't about being off the grid, it is about converting the grid to a sustainable energy network. We can only do this together. Trying to be truly off-grid, using only technology you have made with your own hands from raw materials sourced on your property, though laudable in that it really focusses you on being frugal with energy, is also a form of isolationism which is not sustainable unless you commit to a huge dive in quality of life.
This is the closest thing I have seen to true off the grid lifestyle, but he only does it as a hobby.

A rocket mass water heater with a sterling V-10 engine with a heat sink could heat a green house or home even cool it with water from an underground cistern all without any electricity? You could even generate electricity with it!

put the toilet in the house and do a sink to toilet to biodigester. The water from the sink washes the toilet waste out and into the biodigester. Then you would have gas for your stove and lights.
