Ruth Goodrich of Goodrich’s Maple Farm, Cabot, VT joins us in the Vermont PBS studio to demonstrate her wonderful recipes such as: Salmon and Rice with Maple Glaze; Maple Frankfurters; and Sugar on Snow. MAPLE SALMON 1 Salmon Fillet 1 Small Onion, diced Olive Oil or butter Maple Syrup Cooked Rice Seasonings of your choice Cook rice (1 c rice & 3 c. water) as directed. Set aside, keep warm In skillet, saute diced onion in olive oil or butter till transparent & slightly browned. Set aside In same skillet, begin pan frying salmon in olive oil. When you turn the fillet, pour off excess fluid, add onions and pour maple syrup over fillet. Baste as you finish cooking. Serve on bed of rice. Add seasonings or herbs as desired. __________________________________ Maple Glazed Frankfurters Maple syrup Frankfurters, sliced into 1/2" slices Boil syrup in sauce pan till it starts to thicken when poured from a spoon (this will happen very fast) Add Frankfurters and gently stir to coat them. Simmer for just a couple of minutes to fully cook them. Serve with toothpicks. __________________________________ Sugar on Snow 1 cup maple syrup (or more depending on how many people you want to serve) Dab of butter (use vegetable oil if you have dairy allergies) Cook syrup to 232 degrees or till it will just stay on top of snow. Pour onto snow and eat with a fork.
