This is an easy method to make your own pandan extract. Pandan (sometimes pandanus or screw pine) is a pant that grows in SE Asia that has an gentle flavor that is sometimes compared to vanilla. Because it is hard to describe flavors, I will say that it does indeed have a gentle vanilla note, but it also has a coconutty and grassy taste as well. It is usually added to cakes, drinks, rice and crepes. This video shows an easy way to extract the pandan. you can also just knot it and throw it into a pot of rice or soy milk when it is cooking and remove it once it has cooled. You can also juice it in a juicer that can handle greens. (not all juicers can) this will be a far more concentrated version of the extract. I made about 2 cups of pandan extract in this video, and it all went into making 2 cups of pandan rice. The rice was light green and had a beautiful perfumy aroma.
