Stuffed peppers can be filled with many different things: from rice, to beans to ahem - meat. There are zillions of variations of this recipe coming from every corner of the globe. This one so happens to be Mexican inspired, but feel free to add your own favourite ingredients. My Nonna (Italian Grandmother) stuffs hers with risotto and cooks them in broth and white wine - quite different than this recipe but goes to show how versatile this dish can be! Choose whichever kind of pepper you like. I'm using poblano in this video, which has a very gentle spicy zip-zap. They are quite small and cook in about 30 minutes. If you are using a larger pepper such as green/red/yellow/orange bell pepper, you may need to cook these babies longer. This recipe is for 2 servings 2 peppers, I'm using poblano 1 cup cooked rice 1 can of kidney beans, rinsed 1 can corn 2 cups water 2 garlic cloves 2 scallions, chopped 2 tablespoons tomato paste 2 tablespoons nutritional yeast 1 teaspoon white vinegar 1 teaspoon ground cumin salt and pepper to taste cilantro and tahini to serve In a large pot or frying pan, add the beans and water. Boil on high heat until they split. Add the garlic, scallions, tomato paste, nutritional yeast, vinegar, cumin, salt and pepper and continue cooking for 5 minutes until they are united. If you want, you can smash the beans at this point if you want a smooth silky slime. Once cooked, remove from heat and stir in the rice and corn. Allow this to cool because your will be touching it shortly with your delicate doll hands. Cut the caps off of the peppers. Remove the seeds and make sure they are clean. Cut lengthwise and stuff with the bean-rice mixture. Preheat oven to 400 degrees and on a lined cookie sheet, bake the peppers for half an hour, or until the pepper skin blisters. Once bubbly they are ready! serve with some tahini and a garnish of fresh cilantro!
