I have slaughtered and cut up thousands of animals. Worked in a butcher shop for years. I have never used the steak knife to score the flesh. I have always used the bone saw first till the bone ends. Then just used boning knife to finish. I still hold the record for "Breaking" hogs. 120 full animals in an 8 hour day

Nice job but i would not advice inexperienced people to use the butchers grip when separate the ham and the shoulder. The danger is that they can stab themself in the leg or belly, it's really dangerous.
