Did you know that you can grow tea in your backyard? The Camellia is the plant that produces a large share of the worlds tea and you can make your own tea if you follow a few steps.

Assamica is a variety of the species Camellia sinensis: Camellia sinesis var. assamica. What was referred to as Camellia sinensis here is Camellia sinensis var. sinensis, There are also two other less common varieties, C. sinensis var. dehungensis and C. sinensis var. pubilimba.

Though it is by no means rocket science, making matcha is a difficult process. Still, if you can get good sencha from your tea plants, you can get good tencha-grade leaves for matcha.

Matcha is the powdered form of tencha grade tea leaves - which are picked from the leaf buds on tea plants subject to gradually increased shade the 4 weeks leading up to harvest. The leaves are subject to the green tea treatment (steaming immediately after harvesting), deveined in a blower-like machine, then dried and placed into a small, slow-turning rotating grinder. (Too fast and the tea powder tastes bad.) The result is matcha.

You want to have mostly leaves, young spring leaves. The stems don't have much caffeine. If you want green tea, roast your leaves either in an oven or a dry wok,. If you want Japanese style green tea, you'll have steam your leaves and then dehydrate them. Making black and oolong teas is a more complicated process.

Cool video. I want to grow tea at home. When I go to harvest, I'm kind of confused as to what I am harvesting.. The young leaves and what else? The bud? Stems? lol any help would be appreciated.
