Would love to know how you keep the heirlooms healthy.

I am living in a condo, working about 65 hours a week to make/save as much money possible to start a farm like this. I grew 10 different plants in 10, 5gallon buckets(tomatoes, cucumbers, peppers) on my balcony this year and figured out I am not bad at this. I am enjoying a lot and I really want to be out, playing in dirt and make money at the same time so I dont need to be in a climate controlled building, wasting my life.
I am planing to buy a land this winter and get ready for the next summer to start a baby farm. how much of a land sould I get? how many plants do I need to make at least 30-40k a year to at least support myself? Getting rich is not my worry. i just want to grow healthy stuff and stay alive. -
