EASY Meal Plan Butternut Squash Soup, Shepherd's Pie, & More

Meal plan for the week in this video: Monday Beef & Noodles, Tuesday Shepherd's Pie, Wednesday Taco Salads, Thursday Butternut Squash Soup & Grilled Swiss cheese sandwiches, Friday Baked potatoes with Mexican vegetable mix & Butternut Squash Soup. Most items made on Monday night, but I made the butternut squash soup on Thursday because of the (optional) cream cheese. ---------------------------- Butternut Squash Soup Recipe: ---------------------------- Ingredients: 1 medium butternut squash 16-32 oz vegetable stock (depending on how thick you like your soups) 0.5 medium onion, chopped 1 TBSP garlic, minced Salt, black pepper, cayenne pepper, onion powder, garlic powder, nutmeg, cinnamon, allspice Optional items: Ground flax and chia seeds (optional) Optional, for a creamier soup - 1 standard block of cream cheese or 1 cup of heavy cream Croutons (ideally Aldi's apple cinnamon or pumpkin cornbread) Directions: 1. Wash squash, slice lengthwise in half, discard seeds. Bake for 45-60 minutes at 375F 2. Peel and cube. Take 1/3 at a time, put in food processor for a few minutes, along with 0.5 cup or so of stock until at preferred soup consistency. 3. Brown onion & garlic. Add squash & spices. 4. Bring to gentle boil, then simmer for 20-30 minutes. 5. Add cream cheese or heavy cream if prefer a creamier soup. Bring to simmer for 10 minutes, but do not allow soup to boil. 6. Enjoy with croutons if you wish! ------------------------ Shepherd's Pie Recipe (slightly cheesy style lol) ------------------------ Ingredients: 3/4-1lb ground beef or turkey 3-4 cups mashed potatoes (with butter to taste if you wish) 12oz frozen peas 1 TBSP minced garlic 3/4-1 block cream cheese, softened to room temp (optional), chopped 1/2 cup shredded sharp cheddar cheese (optional) Salt, black pepper, onion powder, garlic powder Worcestershire sauce Directions: 1. Brown turkey or beef. Drain if needed. 2. Make mashed potatoes; instant is fine. Add garlic, cream cheese, cheddar cheese, & spices. 3. Line bottom of glass baking dish with meat, mix with frozen peas and to taste, about 1/4 cup Worcestershire sauce and spices. 4. Bake at 375F for 20 minutes.
