Insect farming is how we're going to meet the protein needs of an ever-expanding global society. Insects have some of the most bio-assimilable protein humans can digest. (IE: that means we can use more of the protein from them that we ingest instead of it passing through our digestive system or it denaturing and simply getting burned as calories). Their chitinous exoskeleton absorbs saturated fat and passes it through the digestive system. This is just 2 things. We haven't even gotten into what chemicals the cockroach or other insects produce. Monsanto would have you believe that soybeans are the "protein" of the future, but humans didn't evolve eating soybeans or soy protein. They evolved eating insect protein in addition to animal protein. Soy protein isn't very bio-assimilable.. it's a junk source of protein. Before we get to the point of culturing animal tissue in vats for muscle protein, we're going to use insect farming to produce mass quantities of healthy protein for the world. They use far less resources than raising a cow or other animal in the same space, and they repopulate quickly and are easy to take care of.
