Caviar Farming in Northern California
With Farming operations in Idaho and California, Tsar Nicoulai raises white sturgeon, which is native to the Pacific Northwest. This week, Brett visited the farm to see their process. While the sturgeon most closely genetically related to Baluga (Huso huso) is Kaluga (Huso daricus) many caviar connoisseurs believe white sturgeon tastes most similar to Baluga. Though wild sturgeon is endangered, farm-raised sturgeon is sustainable, which allows Tsar Nicoulai to ensure the tradition of this luscious delicacy. one of my best friends used to work at this farm. I'm sad to say that he passed away about a year ago, he was a great guy and I had so many memories growing up with him, I miss him a lot. RIP Steve Wheeler
