Generally tea is the product processed with dried shoots and leaves picked from tea trees. Although the area of tea park in Taiwan has reduced gradually; quality of tea produced in Taiwan has gained highly appraisals of domestic and foreign people. Taiwan can produce Pouchong tea, green tea, oolong tea and black tea and so on. In recent years, Pouchong tea and oolong tea have become the main products and productions of red tea and green tea have decreased. In order to improve quality and technology of tea production, the government has set up tea improvement stations to improve tea trees, cultivation, tea mechanical processing, various tea making technologies and R&D, education and promotion for multiple application of tea leaves. The Yuchi Branch in Yuchi Township, Nantou County supports the production and sale of tea produced in regions at middle and high altitudes in the Central South of Taiwan and red tea. The Wenshan Branch in Shiding Township, Taipei County guides the produdction and sale of Pouchong Tea in the North of Taiwan. The Taitung Branch in Luye Township of Taitung County assists in production and sale of tea produced in Eastern Taiwan and the Dongding Work Station in Luye Township, Nantou County guides the production and sale of Dongding Tea. At present, varieties of tea trees with a large planting area and good quality in Taiwan include Green Tip Oolong, Chin-Shin-Dapang, Si Ji Chuen, Taiwan Tea No. 12 (Kimsam) and Taiwan Tea No. 13 (Cuiyu), which are suitable for making Pouchong tea or oolong tea and Taiwan Tea No. 18 is ideal for making high-grade red tea.
