2015 World Brewers Cup (Rubens Gardelli, Italy)
This competition was a one-year project. I went to pick chermes and realize my ideas. THE TREELOT: the vaseline idea is that not all the coffee trees have the same genetics and they also grow in different part of the farm, therefore I wanted to find special trees selecting from the older and the healthier. THE EMBRYO-FOCUSED PROCESS: the embryo viabilità is a key factor for final cup quality, therefore I developed a system that kept the embryo alive for as long as possible THE MANUAL HULLING: I also imported the coffee in dried cherries because it is a natural protective shield against oxydation and to maintain the right bean humidity level. Then we manually hulled each cherry to avoid the heat caused by the mechanical huller.
